The ingredients needed to cook Undhiyu:
  1. Take For green paste:
  2. Use 7-8 green chillies
  3. You need 13-15 garlic cloves
  4. Take 1 big piece of ginger around 3" in size
  5. You need 1 bowl green coriander leaves chopped
  6. Get to taste Salt
  7. Provide For tempering:
  8. Get 4 tbsp Oil
  9. Provide 1 tsp mustard seeds
  10. Prepare 1 tsp fenugreek seeds
  11. Get 1/2 tsp asafoetida
  12. Take 1 &1/2 tsp turmeric powder
  13. You need 2 tsp coriander seeds powder
  14. You need 1 tsp roasted cumin seeds powder
  15. Take 1 tbsp garam masala
  16. Use Vegetables required:
  17. You need 12 violet brinjals, put cuts at 90° with bottom part attached
  18. Get 1 cup green pigeon peas
  19. You need 1 cup Indian beans (one which has three beans or surti papadi)
  20. Take 1/2 cup chopped spring onions
  21. Take 2 medium size sweet potatoes cut into pieces
  22. Prepare 2 medium size potatoes cut into pieces
  23. Use 3/4 cup purple yam cut into pieces
  24. Prepare 1 big tomato cut into long slices
  25. Take 1 ripe banana washed and cut alongwith the skin
  26. You need to taste Salt
  27. Provide Green garlic finely chopped
  28. Get For methi bhajiyas/muthiyas
  29. Provide 2 cups fenugreek leaves finely chopped
  30. Get 1 cup chickpeas flour (besan)
  31. Get to taste Salt
  32. Get 4-5 cashews broken into small pieces
  33. Take 6-7 raisins
  34. Get 1 tsp coriander seeds powder
  35. Use 1/2 tsp cumin seeds powder
  36. Prepare 1/4 tsp turmeric powder
  37. You need As required oil for frying
  38. Use Served with:
  39. Get Fine namkin sev
  40. You need Puris
  41. Get Jalebi
  42. Get Tilgud
Steps to make Undhiyu:
  1. Make the green paste by grinding it into smooth paste and divide it into 3 parts.
  2. Add one part to Indian beans (surti-papdi) and coat it properly. Let the beans get marinated with the green paste.
  3. Add second part to potatoes, sweet potatoes and purple yam. Let them also get marinated in the green paste.
  4. Last part add to the stuffing to be filled in the brinjals. Stuff the brinjals using spring onions, green pigeonbeans, coriander seeds powder, cumin seeds powder and turmeric powder.
  5. Stuff the brinjals with the stuffing and keep it aside for sometime.
  6. Mix the ingredients of meethi bhajiyas/muthiyas and make small dumplings.
  7. Deep fry them in oil on medium heat till they turn golden brown.
  8. In a pressure pan put oil for tempering and add mustard seeds and fenugreek seeds. Heat it.
  9. After mustard seeds crackles add asafoetida, turmeric powder, coriander seeds powder and cumin seeds powder.
  10. Now first make the layer of marinated surti-papdi, the stuffed brinjals and finally place the layer of potatoes, sweet potatoes and purple yam. Add 1/2 cup water.
  11. Pressure cook till one whistle and then on slow flame for 15 mins.
  12. Now on the cooked vegetables make layer of the meethi bhajiyas, banana and tomato.
  13. Cover the pressure pan with the lid but no whistle and heat it for about 10 mins.
  14. Serve the ready undhiyu topped with fine namkin sev.
  15. Also serve puri, jalebi and tilgud along with the Surti undhiyu.
