The ingredients needed to make Fruity Biscotti:
- Provide 2 cups flour
- Use Baking powder
- Take Pinch salt
- Take 3 large eggs
- Get Vanilla essence
- Prepare 1 kg margarine
- Get Cake fruit mix
Instructions to make Fruity Biscotti:
- Preheat oven to 180°C. Grease and dust with flour a baking tray.
- Place sifted flour, baking powder, pinch of salt and sugar in a bowl. Add the soft margarine and rub together until it resembles crumbs.
- Beat the eggs and vanilla essence and pour into the flour mixture. Knead into a soft dough for about five minutes. Add the the Cake Fruit Mix and knead to mix well. Add more flour if it's too soft to handle.
- Divide the dough into two and roll out one half on a floured surface to form a long sausage-like shape. Place on one side of the prepared baking sheet. Flatten the top a little. Repeat with the other half and place it next to the first one.
- Bake for 20 minutes, until golden brown. - Take out of the oven and cool. Once cool, cut them into small slices and place them back onto the baking tray. Bake again for further 10-15 minutes.
- Serve cool with tea and enjoy.
