- Take 100 gms white vatana (matar)

- Provide 1 tsp roasted jeera powder

- Get 1 bundle Coriander leaves
- Take 1/2 bundle Mint leaves
- Use 4-5 Green chillies
- Use 4-5 Garlic and ginger
- You need For sweet and sour chutney
- You need 100 gms Khajur
- You need 1 small ball of tamarind/imli
- Take as needed Sev
- Get Coriander leaves
- You need as needed Puri
Instructions to make Ragda Pattice:
- To make #Ragda, pressure cooker the white vatana. Heat oil add the chopped green chillies, ginger garlic paste, onions and saute till golden brown. Now add the chopped tomatoes and cook till tender.
- Add all the dry masalas. Add the vatana and water. Let it Boil for sometime.
- Now to make Pattice, boil and smash the potatoes. Add all the dry masalas, give a shape of Pattice and shallow fry on Tawa till crispy and golden brown on both sides.
- To make coriander mint chutney, Take all the ingredients and blend in mixie, add salt
- For sweet and sour chutney, soak the khajur and imli, then blend in mixie and strain it. Add little water and red chilli powder. Bring to a boil.
- Now to serve the Ragda Pattice, place 2-3 Pattice in plate and spread the Ragda over it and the garlic chutney, coriander mint chutney, Khajur imli chutney.
- Garnish with coriander leaves, onions, tomatoes, sev, and little smashed puri's.
- Ragda Pattice is ready to eat.
