- Take 2 tbsps Gobindo Bhog/Basamati/Kali Jeera Rice
- Use 1 Litre Milk (Full Cream)
- Take 1/4 Cup Sugar
- Use 1/4 Cup Freshly Ground Cardamom Powder
- Provide 2 tbsps Saffron Milk
- Provide 1/2 Cup Mango Pulp (preferably, absolutely ripe & sweet mangoes)
- Provide A few Dry Fruits (Chopped) & Fresh Mint Leaves (For Garnishing)
- Get 2-3 Cups Water (to wash & soak the rice)
Instructions to make Mango 🥭 Phirni:
- Wash clean & soak the rice in water for at least 30-45 mins & then, blend it to a coarse paste & keep aside.
- In a large saucepan- boil the milk, keep on stirring occasionally & simmer for 10 mins. Keep the gas flame on low until the milk thickens a bit, add into it the cardamom powder.
- Add in the prepared coarse rice paste and keep on stirring continuously for the next 5/6 mins. Else, lumps might form.
- Keep the flame on low & keep stirring for another 5 mins until the rice is well cooked.
- Now, add in- the sugar & the saffron milk & keep stirring the mixture, until it finely thickens & forms a creamy texture.
- At this point- put off the flame & pour into it, the previously prepared mango pulp and mix it nicely until well incorporated in the entire thick mixture.
- Finally, allow it to cool down completely and garnish with the dry fruits & fresh mint leaves & refrigerate the same for at least 1-2 hrs before serving it, absolutely chilled.
