  1. Prepare the cauliflower by removing the leaves and tough inner stalk. Chop roughly into even sized florets and place in a pan of boiling water. Simmer for 10 – 15 minutes until nice and soft, but not water-logged and soggy.
  2. In a medium sized saucepan, gently heat the garlic, coconut oil and coconut milk for 5 minutes. Add the drained cauliflower florets to the pan and stir to combine. Continue cooking gently for another 5 minutes.
  3. Allow to cool slightly before putting the entire mixture in a food processor (if you don’t have a food processor you can mash by hand, although the mash won’t be as smooth). Process until nice and smooth. Season to taste with salt and pepper.
